Kafuli

Often called the state dish of Uttarakhand, kafuli is a thick green curry of spinach and fenugreek leaves cooked slowly in an iron kadhai and bound with a little rice or gram-flour paste. It is simple, iron-rich winter food, eaten with rice or mandua roti.
Ingredients
- •Spinach (palak) and fenugreek (methi) leaves, chopped
- •Rice paste or gram flour (besan), to thicken
- •Ginger, garlic, green chilli
- •Mustard oil, cumin, turmeric
How it's made
- 1Boil and mash the greens.
- 2Temper mustard oil with cumin, ginger, garlic and chilli.
- 3Add the greens and turmeric and cook down.
- 4Stir in the rice or besan paste to thicken and simmer until glossy.
