Singal

A sweet, spiral-shaped fritter piped into hot oil, crisp at the edges and soft inside. Singal turns up at festivals and family functions, flavoured with fennel and sometimes a little banana in the batter.
Ingredients
- •Semolina (suji) or rice flour, 2 cups
- •Curd and milk to make a thick batter
- •Sugar, to taste
- •Fennel seeds; ripe banana (optional)
- •Oil for deep frying
How it's made
- 1Whisk the semolina with curd, milk, sugar and fennel into a thick, smooth batter and rest it.
- 2Pour the batter into hot oil in a spiral or ring using a cloth cone or bottle.
- 3Fry until golden on both sides.
- 4Drain and serve warm.
