A Kumaoni green curry of spinach cooked down and thickened with a rice-flour paste, close to Garhwal's kafuli but with its own local character. It is mild, green and iron-rich, eaten with plain rice.

Ingredients

  • Spinach (palak), chopped and boiled
  • Rice paste, to thicken
  • Mustard oil, cumin, ginger, garlic, chilli
  • Turmeric, salt

How it's made

  1. 1Boil and mash the spinach.
  2. 2Temper mustard oil with cumin, ginger, garlic and chilli.
  3. 3Add the greens and turmeric.
  4. 4Stir in the rice paste and simmer until thick.
