The daily bread of the hills, made from mandua, the finger millet also known as ragi or koda. The dark dough is kneaded with hot water and patted out by hand into rotis that are heavier and more filling than wheat, and far richer in iron and calcium.

Ingredients

  • Mandua (finger millet / ragi) flour
  • Hot water
  • A pinch of salt (optional)
  • Ghee, to serve

How it's made

  1. 1Knead the flour with hot water into a firm, dark dough.
  2. 2Pat each ball out by hand or between sheets, as it does not roll like wheat.
  3. 3Cook on a hot tawa, turning, until set and lightly charred.
  4. 4Serve hot with ghee, dal or bhang chutney.
